Oh, this is good!

I’ve never tried this brand of chocolate before. I prefer semi-sweet so this was a real treat to be able to try it out. Everyone’s taste is a little different so let me describe the flavor as very close to Nestle’s Semi-sweet morsels used in chocolate chip cookies. Scharffen Berger is just a little bit sweeter (not quite the sour bite I’m used to).

I did not taste the honey but I did have an aftertaste of citrus. Its hard to describe. Its like if you eat a fresh ripe strawberry, after a few chews you get a little twang after you notice the sweetness.

Good chocolate is expensive so I think the price is reasonable at around $3 per 3 ounce bar. Although there is a cross-cut design on the top, it does not help if you want to make specific sized pieces.

In summary, Scharffen Berger makes a decadent gift for an adult who can appreciate its delicate balance. My wife has it on her wish list.

To die for,

I grew up in Germany where chocolate is not quite so sickeningly sweet. This American-made product comes as close to European fine chocolate as some of the regional makers, such as South Bend Chocolate and Coffee Company in northcentral Indiana. This chocolate has a smooth, silky melt and refreshens the tongue with a very pleasant taste. It’s chocolate and not sugar that tantilizes the tastebuds.

I never heard of this chocolate until Amazon offered on it sale before C’mas. Then Amazon offered it again about a week ago and this time I bit…and bit and bit and bit. This stuff really is that good. I also tasted the Papau at 68% cocoa and the Bittersweet at 62% but this 41% chocolate tops the cake.

I will order it every time Amazon offers it on sale, because even though this is delicious, it’s also very expensive at the “regular” price.

Dark Delight!

I like my chocolate dark. Not too bitter, but well balanced with a lightly sweet and creamy texture. I lost my taste for milk chocolate long ago. These bars are not on the same level as plain cocoa nibs, but they do have a *kick* to them.

That isn’t to say that the Extra Dark Chocolate 82% Cocoa bars are that bitter, but they are not your regular mass produced dark either; like those with 65-75% cocoa levels. This is a bar for those people that treat their chocolate consumption like that of fine wine. Every nibble is to be savored. Small bites melt on the tongue and give a richer experience that let the eater discover the subtleties that abound in fine Scharffen Berg chocolates. Cramming them into your mouth like a Wonka Bar should NOT be an option.

As the company description goes, the 82% Cacao Extra Darks are like a fine red wine. A Cabernet perhaps. They have a sweet plummy/pruney scent that translated to flavors of fig and date on the tongue, finishing with a hint of coffee and faint spiciness that had me checking the ingredients for chili peppers. They are a bit dry at first nibble, but become creamier as they soften in the mouth. Every slow and savored bite offers up new dimensions of flavor. I wouldn’t recommend eating or drinking anything while enjoying one of these bars, but if you did, perhaps a nice cold sip of milk between bites would expand and spread out the flavors a bit.

Scharffen Berger chocolates are considered one of America’s finest chocolates with good reason. They are a bit more expensive than some other top shelf chocolates, but in my opinion are worth the slight premium. Lovers of dark chocolate should enjoy taking it to the edge with this 82% cocoa creation.

Luscious,

This is a deep, rich, luscious chocolate. I intend to use it for frosting, so I had to hide a few of my six bars because otherwise they would all be gone by now. I made the mistake of offering samples to family and friends.

Let it melt in your mouth. Very smooth.

It supposedly has a citrus undertone, but I did not detect it and no one else mentioned it. It must be very subtle.

My only “complaint” is that it is scored into relatively large pieces that are too big and awkwardly shaped for eating from the bar. Of course, it could be broken into smaller pieces, but . . . . somehow that never happens and I always eat the large piece I broke off. No will power. And friends and family each got a bigger piece than my chocolate greed would normally have allowed. Okay, so that’s my fault and not the manufacturer’s.

I might also point out that this is semisweet chocolate. So there is a light touch of sweetness, including a very slight honey undertone. It is my favorite semisweet, but that makes this only my second most favorite eating chocolate, as I usually reach for bittersweet — my favorite chocolate for munching is Ghiradelli Bittersweet 60% Cocoa Chips (Ghirardelli Chocolate 60% Cacao Bittersweet Baking Chips, 11.5-Ounce Bags (Pack of 6)). We usually associate cocoa percentages with sweetness (62% cocoa for the Scharffen Berger semisweet), but semisweet chocolate in general is just a bit sweeter than bittersweet.

Here’s another wonderful use for the Scharffen Berger semisweet: try heating some of the milk and melting some of the chocolate in it. Oh, my gosh! You’ll never use hot chocolate powder mix again.

Why Nations Fail:(A New York Times Best Seller) The Origins of Power, Prosperity, and Poverty.


Good theory, long book, thought provoking,

This book is a narrative restatement of the Acemoglu & Robinson’s previous work on the dynamics of transitions to democracy. While those are somewhat tedious in their math, this one is almost the opposite in running away from math and resorting to narratives to persuade.

Well, it could have done with a good trim and the removal of some repetition. Maybe group the book by region rather than by thesis since some regions tend to come up several times to make different points.

Nevertheless, it is a great book. Great, as in one everyone should read. It really will give you a different way of thinking about politics, economics, and history. Instead of slicing along the traditional (and broken) left vs. right views of history they introduce the dimensions of extractive vs. inclusive to explain why systems fail or improve. And it does look like the idea has a lot of explanatory power.

So I’m giving it 5 stars since it really should be on your reading list. Darn it though, I wish they had better writing skills or a decent editor to trim it. This book would be stellar if the authors had followed the dictum of first write your book, then throw half of it away. So you, dear readers, will just have to deal with it.

Intellectually stimulating while generating a sense of despair,

No single premise can possibly completely explain why some nations were able to emerge as stable in both the political and economic sense and others seem incapable of achieving any real stability in either sense. However, to the extent than one premise can explain it, the authors of this book have found it. They divide nations into two categories based on their political and economic models, the inclusive and the extractive.

The inclusive are where there are significant checks and balances in the political and economic system and where there are laws to protect people from having their property seized and those laws are enforced. An extractive model is where there is a small elite that controls nearly all the political and economic power and property can be seized by members of the elite and the majority can do very little about it. There are also few if any restrictions on the actions of the political elite.

A country following the inclusive model protects property rights and that extends into the area of intellectual property. This stimulates innovation and the adoption of new technologies that allow for economic growth. In countries following the extractive model, people are often forbidden from using new technologies as they are considered a threat to the ruling class. If the new technologies are not forbidden, people are reluctant to adopt them for that will make them wealthier and more exposed to the interests of the kleptocratic leadership.

The authors put forward a great deal of evidence, going all the way back to the days of the Roman Republic and the transition to the Empire. One of the most interesting data points was the reaction to the advent of the Black Death in Europe and how the response was quite different in Western and Eastern Europe. In the East, the death of one-fourth of the population led to further movement to an extractive model while in the West, the slow move towards the inclusive model began.

Many other political entities, both ancient and modern, are examined in the author’s arguments for their positions. The ancient Mayan, Aztec and Inca Empires and the consequences of the Spanish conquest, China’s withdrawal from the world at the time when the Europeans were exploring, the actions of the European establishment of their colonial empires, the Japanese Meiji restoration and what has happened in Latin America and Africa in the last few decades are all examined. The arguments are persuasive and give the reader a sense of hopelessness that the failed states will ever be able to achieve any form of stability. It seems that their pasts have added so much baggage that these countries will never be able to swim upstream.

Another of the most interesting analyses is that of the country of Argentina, which was a wealthy country in the early part of the twentieth century but then embarked on a series of actions that has turned it into one of the most economically unstable countries in the world. The fact that an inclusive country can change into an extractive one is troubling. Readers that follow the growing trend of wealth concentration in the United States will wonder if that is not possible in the United States. This is one of the most intellectually interesting books of recent years and it could be used as a reading resource for courses in economics, history, current affairs, sociology and political science.
